Method of production
The grapes were harvested at that time by hand and fermented as classic white. The berries were immediately pressed. The fermentation of the resulting juice was stopped by the addition of spirits, thereby retaining natural grape sugar. The wine aged for several years in an oxidative atmosphere.
Description
Beautiful, bright old golden shade with red highlighted elements. The nose is strong and complex and delivers an excellent range of smells of blending mandarin, gingerbread, candied fruit and fine scents of mature oak hairdressers. The aromas are warm and charming and reveal coffee, roasted almonds and nuts rounded by the touch of candied citrus.
Storing
It can age a few decades in the cellar.

Outstanding as an aperitif or after-dinner drink, it is the ideal partner for crema catalana, chocolate fondant cake, mandarin cake and tiramisu. It is also an amazing addition to sweet and sour foods such as duck à l'orange, lamb tagine with apricots, caramelized pork ribs or cheeses like Roquefort, pressed sheep's milk and Comté served with fig jam.
